This is a good question and one the we love to answer.
Traditionally built kitchens rely, completely, upon the ground staying level, or, at a minimum, not moving. In situations where no deep footing (normally at least 30" down) is laid, there is no way to counter the forces of the freeze and thaw cycle we experience here in Utah. The result is that the ground moves from season to season- just think about our poor roads- and the kitchen structure will start to move as well.
Over time, you will find problems start to occur. The countertop can crack, due to lack of support, accessory doors and drawers will start to catch and pinch as they are not longer supported per manufacturers specs. This list of issues is long.
What makes our kitchens profoundly different is our use of welded tube steel to create the skeleton that will become the structure of our kitchen. We also use adjustable feet to account for the movement in the ground. Rest assured, our kitchens will not buckle to the forces as long as they are adjustable.
This also allows us to confidently install granite surfaces without the fear of cracking due to ground movement.
